    Alternatives to smoking, The teracotta pot smoker (Beef Jerky attempt))

    Sunny here in Seattle so i decided to break out my smoker for the second time this season. I wanted a smoker but wasnt sure I was into it enough to buy a heavy duty real smoker and line it up next to my weber performer so i did some browsing and found the alternative.
    Made a Teraccotta post smoker through information i found online and it does great. I used it 10 times last season and did baby back ribs, salmon, beef ribs, and turkey breast. These can be put together for minimal $$, just need to find the pots. I am maybe $75 all in with everything including burners, grates etc.

    Doing some ribs today and will use the 2-2-1 method @ 225 - 240 not sure my temp reading is 100%. I am not picky about rubs etc just make whatever i have on hand. Here's some pics of the start, will post some later of the final product. I stacked it today with 2 racks of ribs.

    Those look good. I like to use yella mustard on my pork as well. Holds the rub firmly on, but you never taste it when the cook is done.

    Took a break from lawnmower, she's cold and backfiring left and right cant finish the lawn.

    Oh shit...fire in the hole my smoke pellet and foil chamber caught fire.... usually used soaked wood but these pellets had apple flavor and worked fine for my brisket.

    Ok fires out, not too much damage done i was running at 240 when i pulled the top off, a little char on the bottom. Back on for a few more hours to soften up, put some apple juice on em while in foil. See my pellet chamber burned up.... not sure what happend really.

    exactly, and the fact i only used it 10 times last year emphasized I do not need to go spend big money on a smoker let alone the amount of space they take up.
