    I don't like tomato based pizza sauce.

    I make a white sauce and eyeball all of the ingredients.

    Ricotta Cheese
    Heavy Whipping cream
    Olive Oil
    Salt
    Pepper
    Garlic Powder
    Red Pepper Flakes
    Dried Oregano

    Put all of that in a bowl and mix with a spoon.

    It's very versatile you can add or subtract ingredients. Oregano though is kind of a must, really gives it that pizza flavor.

    Take a can of drained San Marzano Italian whole tomatoes. Add salt, pepper, oregano and some crushed garlic. Puree until slightly chunky with food processor. Put on pizza (lightly) and top with quality mozzarella.

    DO NOT PRECOOK SAUCE! It will cook enough in the oven as the pizza cooks.

    A lot of good places use straight up San Marzano tomato, straight out of the can, no seasoning even needed.
