anyone have a great queso blano recipe?

    i made this queso dip from a recipe by ree drummond ("the pioneer woman") a few weeks ago and it was all velveeta and jimmy dean spicy breakfast sausage and it was heavy and overly tangy and gross. i'm looking to make some kind of authentic queso blanco recipe this weekend. not sure if i should go with monterey jack cheese as the base or, like a lot of recipes seem to call for, white american.

    i also made some kick ass dark chocolate and sea salt cookies and i have two loaves of rye bread proofing right now that i'll be baking in a few hours. :cheer:

    maybe pic threads to follow.

    but for now...make with the amazing queso blanco recipe please.

    Mix Asadero w/ Monterrey Jack

    Use fresh chopped tomatoes, cilantro, white onion and jalapenos

    Sneak in some garlic if you go that way

    1. Go to Costco
    2. Buy a tub of Queso Blanco
    3. Heat it.
    4. Enjoy!

    as it should.

    i'm going to use this as a base recipe and then fuck around with it a bit...


    1 tablespoon refined coconut oil (or other neutral oil)
    1 small onion, divided
    2 - 4 jalapeno peppers, seeded, deveined, and minced (divided)
    ½ cup heavy cream
    8 ounces Monterey Jack cheese, cut into chunks
    4 ounces white American cheese, cut into chunks
    1 ½ tablespoons fresh chopped cilantro, divided
    1 Roma tomato, deseeded and diced

    Cut onion in half and mince one half. Set aside.

    Warm oil in a small saucepan over medium heat. Add 2/3 of minced jalapeno and grate ½ onion into pan. Stir to coat and cook for 3-5 minutes until tender. Add cream and bring to a bubble. Add cheese a little at a time, stir until cheese is melted. Stir in 1 tablespoon cilantro.

    there we go. mix the two cheeses...check. saute the onion, i'm assuming?

    Costco's is pretty good but not as good as home made or some that I've had at restaurants.

    Jack will make it creamier than asadero alone


    I don't. If you cook it all slow and low, everything should soften up and the flavors all sex each other up

    Maybe it started to please the tourists, but it's popular there

    Good stuff
