I did a mead tasting before at a Mead/winery nearby. It is very sweet and thick like cough syrup, did not really enjoy.

I have. It's made with honey, which explains the thickness.
Actually, my bride used to hang out with a bunch of medieval re-creationists and made her own mead as well as other period correct beverages. They drank some interesting stuff back in those days.

That's where my husband got it. Honey Mead it's called.
A VW bus camping friend was a home brewer and brought along some honey mead made with champagne yeast on one trip. It wasn't thick or heavy at all, more like beer with a light, sweet taste. Really unique. Never tasted anything like it before or since.
How to guide. Seems Pretty simple.
