    These days, the potato has pretty much taken the place of the parsnip as a source of starch in our diets. In days of old, before potatoes were deemed edible, the parsnip was prized not only for its long storage life, but also for its sweet, nutty taste and nutritional value.     The parsnip, botanically-known as Pastinaca sativum, is a starchy root vegetable resembling an overgrown ivory-skinned carrot. Parsnips grew wild in Europe and were considered a luxury item for the aristocracy in ancient Rome. Due to their natural sweet and nutty flavor, parsnips were usually served sweetened withhoney or in fruited cakes and desserts.

    The Europeans brought parsnips to the United States in the 16th century, but to this day, they are not as popular with Americans as their carrot cousins. Although starchy like a potato, the parsnip is considered nutritionally superior.

    I have never had a parsnip to my knowledge. And I think they are high on the glycemic index list (along with potatoes). FYI. :)

    Thanks, been buying them recently....I had always heard them mentioned in literature and such. Yet never saw them around. The connection to Europe was why they were mentioned in classical literature IMO

    What happens if one of the racing dogs actually catches the rabbit?

    If the dogs catch the arm, then it is because of an electrical malfunction. The arm is ran by a human and doesn't get "set" to a specific speed. If the arm fails to collapse at the finish, the dogs usually try to chew on it but they do wear muzzles so they mostly just beat at it with their muzzles. When the race is over the electricity is killed to prevent the dogs from getting electrocuted. If a dog jumps a rail and tries to attack the arm as it goes by they will most likey be electrocuted. Same thing if they hit the rail on the inside. Sadly this occassionally happens.
