beef tenderloin portion question

    I'm roasting some tenderloin for xmas and slicing it with rolls for sandwiches. We have people coming by throughout the day. Here's my question: 7 adults will be fed with this and other food, how much tenderloin should I get? Is 2lbs enough? TIA

    That's 2.3 ounces per portion, before shrinkage from cooking. I'm assuming this is beef tenderloin. There will still be a little fat, even though it is a tenderloin, say, 5%. If it was me, I'd probably triple it.

    Edit: I see you said it was beef.

    No. I say 3 lbs. Figure 1/4 lb a sandwich and men may have 2. Leftovers are good on a salad.

    I'm with Gwartney, you need 6 lbs. What's the worst that could happen, you have leftovers?

    I do tend to be excessive though. So factor that in to my response. A more reasonable person might say 5 pounds, but only if there's a lot more food. :usanta:

    You can never go wrong with leftovers. Better safe than sorry.

    I'd go 4 lbs, myself. You won't have to cook the next day when you're nursing a hangover.

    this sounds about right. I understand the better safe than sorry and leftovers theory but tenderloin peeled is like $12 a pound I think

    If you're cutting it down to 3 lbs with 7 adults.........my only suggestion then would be to back it up with lots of other food.

    Consider the fact that a turkey is typically 12 lbs.

    It's around $15 a pound here. But it's Christmas. The other thing is, you'd better slice it yourself, otherwise some joker will carve off about a 3 inch slice for himself. That sounds so good. :buffet:

    That's terrible advice. Each roll will need about 3/4 pound of meat to make it look full. So get small rolls.

    Don't trust anything you read on the internet. My math was faulty. 2 lbs is 32 ounces. 95% (for shrinkage) of that is around 30 ounces. Divide 30 by 7 and you get about 4.3 ounces per sandwich. That's enough, barely, for 7 sandwiches. Sorry about the bad math.

    It's up to you but I always get more than I think I'm going to need. Those sandwiches are going to be popular and, depending on your crowd, some people are going to go for seconds. 12 sandwiches with 4 oz portions are going to be 48 ounces or 3 lbs (not counting any shrinkage)

    Sorry for the bad advice. Your guests are going to be delighted!
