    bratwurst is not in my wheelhouse.

    There are two schools of thought...

    1. Boil in beer with onions and butter and then finish on the grill.

    2. Grill low and slow, and carmelize the onions in butter and add beer into the onions.

    Any guidance will be appreciated.

    I'm making potato leek soup and bratwurst. I have no idea why.

    Done them #1 style, come out well. PRO TIP: Instead of beer, try boiling them in either hard apple or pear cider.

    then cover them with kraut so you forget what you are actually eating :)

    It has been my experience that cooking them low and slow on the grill will make the skin tougher. If you boil them, then throw them on a grill for a few minutes, the skin won't be as tough.
