    blairg, you're one a my favorites, so let me share my mushroom prep technique with you. this goes great with beef/steak...

    put some extra virgin olive oils and some salted butter into a frying pan and get it hot...not smoking hot, but very hot.

    throw in sliced, halved, or quartered mushrooms, but don't over crowd them, and toss in oil/melted butter so that all are coated.

    allow to cook for a few minutes and give the pan a toss/shake (or stir if you ain't chef like) and allow to cook. continue this until they are browned.

    pour in a small amount of cooking sherry to deglaze the pan. once all the bits are off the bottom of the pan, add a little bit of good balsamic vinegar and cook for maybe 30 seconds more.

    add to top of steak, with all the sauce in the pan.

    have a orgasm and nut in your toughskins.
