My kids didn't like it. Oh well. I thought they were deeeeeeelish. So you start out with some Beef Short Ribs. Derrrr. I dredged them in flour. Unbleached flour.
The recipe called for pancetta. I went with bacon Render the bacon and use the fat from the bacon to brown the ribs.
I diced an onion, carrots and minced a couple of shallots and added them to the pan after I removed the ribs. That's the bacon I rendered in the bowl. I will add those back later.
Of course after you soften the onion and carrot you have to de-glaze with 2 cups of dry red wine, then add 2 cups of low sodium beefbroth. Throw in a couple sprigs of thyme, the ribs, bacon and cook for 3 hours.
