i been making a crockpot full of chicken tortilla soup each week for the past two weeks an i been eating it for dinner pretty much every night. it's delish, especially with some cheese, guacamole, sour cream, an tortilla strips on top, but i need a new crockpot soup recipe. anyone got a good, healthy crockpot soup recipe or just a good healthy crockpot recipe? i want a make something in there for this week's dinners. here's the recipe i use for the soup. i throw in some other spices an stuff (like jalapeno peppers, etc), but this is the bones for the recipe. crockpot chicken tortilla soup ingredients 1 pound frozen chicken (shred near end of cooking time) <-- (i use one whole store deli bought roasted chicken, broken down and chopped without bones or skin) 1 (15 ounce) can whole peeled tomatoes, mashed (rotal or diced tomatoes would work) 1 (10 ounce) can enchilada sauce 1 medium onion, chopped 1 (4 ounce) can chopped green chile peppers 2 cloves garlic, minced 3(14.5 ounce) cans chicken broth 1 teaspoon cumin 1 teaspoon salt 1/4 teaspoon black pepper 1 (10 ounce) package frozen corn 1 can black beans, rinsed directions 1. place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. 2. pour in chicken broth, and season with cumin, salt, and pepper. 3. stir in corn and black beans. 4. cover and cook on Low setting for 6 to 8 hours or on high setting for 3 to 4 hours. 5. garnish with crushed tortilla chips, sour cream, shredded cheese, or avocadoes. (Note: garnishes not included in nutrition information) Makes 8 servings.
Dinkus, I'll post some later. (I love throwing a pork shoulder in there and covering it with broth/spices, whathave you and using it for different things the next few days. Tacos, enchiladas, sandwiches, just to pick on...) I'll be back.
You should really ask AG about this. Have you seen his chicken w/foam recipe? Looks very slimming, and after all the natural flora in your intestinal tract have been cleared by the parasitic onslaught, you can get some nice new intestinal wall linings for the holidays!
that sounds so good. it's cold an snowy here today an some hot queso beef dip for tortilla chips would be so good. i'd throw a can of rotel into that bitch, too. thanks fender. it's delish. i top it by slicing up some fresh tortillas and crisping the strips in the oven and then sprinkling with some sea salt. and i douse generously with cholula. chicken with foam.
That's my problem. I have so much I can't decide. I have a pork tenderloin and splenda brown sugar and root beer and hamburger buns for pulled pork sandwiches. A picnic ham. Beef stew meat. Several packages of various chicken parts. I made a Yankee pot roast Friday that was just sooooo good.
Dink, have you looked at the fat content of those tortilla strips? A commercial tortilla chip contains almost one full gram of fat per chip.
No shit, Dink. You know what is actually really good in a crock pot and beyond fucking lazy to make? Just buy a bag or 2 of frozen meatballs, dump them and a jar of jalapenos in it, turn it on and let it go. No shit. Stuff is good. Not a soup, but it doesn't get any easier than that.
