    i saw the juicy lucy on "man vs food" and thought it looked interesting. in case anyone is expecting some exquisite end product, i'll tell you now, this is about making a cheeseburger. so don't be disappoint when in the end you see a pic of a cheeseburger (or as weirdos from connecticut call them, cheeseburgs).

    first, the essentials -- ground chuck and deli american cheese:

    i divided just over a pound and a half of ground chuck into four parts:

    and then i worked the chuck pretty handily into four balls. i usually don't work ground beef this much when making burgers, but with a juicy lucy you need it to be densely packed so it seals the cheese inside and doesn't leak when cooking:

    divide the four balls in two parts each. half will be for the top patty and the other for the bottom patty. i cut it with a knife and realized that it looks like a fat vagina kind of.

    take each half of the ball of meat and flatten and shape into a pretty thin hamburger patty. then take a slice or two of american cheese, cut it into quarters and place around the center of the bottom patty. you want to leave room around the edges where there isn't any cheese.

    put the top patty onto the bottom patty and crimp and work those edges together so that they form a good seal around the cheese. you'll end up with a patty with a bump in the middle...

    set patties on wax paper and put in fridge while you make your crispy oven fries. start with a couple of big potatoes that you washed really well to get the poop and pesticides off of them...

    always leave the skin on.

    coat with extra virgin olive oil (or an inferior oil if you choose) and season on a foil lined baking sheet. these have coarse sea salt, pepper, and paprika...

    oh, put those fucking potatoes in the oven at 425 F for 30 to 40 minutes. when there is about 15 minutes left on the potatoes, start cooking the juicy lucy patties...

    you're actually going to cook them for longer on the bottom side that the top side. flip when they cook a while and get some good caramelization...

    and then poke through the upside of the burger to allow steam to release...

    pull from the pan when done and set aside. these need to rest for about 10 minutes.
