EMERGENCY QUESTION FOR LEMMY and other BGE owners

    I got my large BGE up to 250, rock steady. Then I opened the lid so I could put hickory on the fire, install the place setter and grill. I put the ribs on, they weren't room temp but they weren't cold.

    I closed the lid and it's been about 15 minutes and it's not back up to 250 yet. It's been slowly climbing and it's up to 156 now. I have a Maverick thermometer sitting on the grill so that's cooking temp.

    I didn't worry too much because The ribs will be soaking that smoke up since the temp is so low.

    Should I futz with the vents? I'm afraid I will get it too hot and it's hard as hell to lower the temp. Am I just being too impatient?

    OK, no instant answers. I opened the daisy wheel vents just a fraction and the bottom one too. I'm going to watch it closely and see what happens.

    I just never even had to think about temps when I used my weber. I know exactly how to set it. This is my first try at ribs on the bge.

    Directly next to it, almost touching and it is over the plate setter so it isn't getting any direct heat from the coals.

    It is new. I've done steaks and burgers several times, a Tri Tip, chicken, but this is my first real smoke.

    I had an offset for years and I can smoke almost anything on the weber. I've also had a bullet smoker. So this isn't my first rodeo, just with the bge.

    i'd get back up to temp
    once it's seasoned you may be able to hold temps better
    trial and error with new shit

    not happy with your maverick probe placement tho

    Where would you put it? I am looking for the actual cooking temp. You think the meat might be affecting it?
