    Now that it is Fall (alright not for another 16 days...) guys need to prepare for the official autumnal ritual of passage: football weekends.

    Some of the ritual items essential for the celebration are easy to get: you can just buy a dozen cases of beer (or a half keg for the purists) and Costco sells Doritos and Tortilla chips by the fuck-ton, but what about the dip? you can't make chili cheese dogs and nachos without the only thing out of Mexico that Donald Trump wants to see more of in the USA: Queso!

    In the past, especially on SuperBowl Sunday the stores here actually ran out of this essential ingredient: last winter, when there was a shortage of this key ingredient just before the Super Bowl, the Today Show urged consumers not to resort to hoarding – their favorite queso dip could be made with substitutes.


    First home-made velveeta cheese:


    Homemade Velveeta Cheese

    Yield: About 22 ounces

    Prep Time: 10 minutes

    Total Time: 10 minutes

    Make your own Velveeta cheese at home in less than 10 minutes!

    Ingredients:
    ¼-ounce packet unflavored gelatin
    6 tablespoons dry milk powder
    1 cup boiling water
    16 ounces mild cheddar cheese, shredded

    Directions:
    1. Line a small loaf pan with plastic wrap, covering all sides and leaving excess to hang over the sides.

    2. Place the unflavored gelatin and dry milk powder in a blender or food processor (I used my blender). Pour the boiling water over top and immediately pulse to combine. Add the cheddar cheese and puree the mixture until smooth.

    3. Immediately pour and scrape the cheese mixture into the prepared loaf pan, smoothing it into an even layer with a spatula. Fold the excess plastic wrap over the cheese, pressing it against the surface of the cheese, ensuring that it is completely covered. Refrigerate for at least 12 hours, until set.

    4. Then cube it up, add one can of Ro*Tel, and some chili, heat it to melt the cheese and stir = Chili Queso:

    i like the part about making your own velveeta so you can control the quality of the cheese, although for a true tailgate party i suppose mediocre quality is desirable because after the first 6 beers nobody will be able to tell.

    That's fair.

    And you're right about the mediocrity as when I was a student at Alabama we would start drinking when we woke on game day and food quality meant nothing.

    its real cheese but the jello is the secret to how creamy it is. its how they make cheese sauces that do not break in the heat. if you are near a costco or sam's club you can buy shredded cheese in bulk and make much better velveeta. here in NYC its a wash as far as the price of either cheese or velveeta (unless I order from amazon or jet).

    I adore cheese.

    I was just in the store and price for both reg cheez n Velveeta is same here on West Coast, too, and I am always all "WTF?!!!".

    i don't know, I just grabbed it off the interwebz. I normally pay $5-6 for that size. They also have goat cheese with chives!!!!! :wub:
