    Hey there,

    Hope everyone is having a nice weekend. I didn't have any baking projects lined up for the weekend since I was hanging out with Grid, but I actually did two last weekend and would like to share the second with you now.

    You'll either love the idea of this or totally hate it, but I love the combinations of apples and cheese. I am also fond of having a slice of melted cheddar on top of apple pies, so I came up with this creation.

    Apple Turnovers with a Cheese Crust

    First thing I did was take some amazing local apples, peeled and sliced them.

    Then I sifted some flour, salt, and sugar together.

    I raked shortening and pats of frozen butter into the flour mixture to make it nice and flaky.

    At certain points I did stick the dough into the refrigerator so it didn't lose its desired texture.

    I then shredded some cheddar, mixed it with a little bit of pre-shredded store cheddar for color and folded it into the dough

    Its not labor intensive and I'd rather do it then sit around and watch TV.

    Actually, if you could see the TV from your kitchen, you could do both if its not something that too incredibly absorbing.

    Thank you, I'm a fan of stuff that looks sort of rustic and country as long as its not overkill.

    While i was resting the dough, I cut the apples up, and cooked them until softened in a saucepan with butter, sugar, cinnamon, ginger, and a bit of cornstarch to keep it all bound together.

    I rolled out the dough and cut it into small circles and placed a spoonful of filling inside.

    You need more coffee....also, you've been working so much that there's no shame in wanting to lay around and do nothing for a few hours.
