    Saute up a large onion and a few cloves of garlic in some butter and olive oil for about 5 minutes...then drop in some (3 each) chopped celery and carrots.

    Get yer Holiday Hambone (@HAL) out, grab a quart of chicken stock and a pound of split peas that you soaked for a couple of hours then rinsed and drained.

    Drop that BONE in the pot, add the split peas, the chicken stock, a bay leaf, some rosemary and some S&P.

    After about 45 mins...looks like baby puke, but have no fear.

    I made this last year with the leftover ham bone from easter and it gave me the worst gas of my life. I sounded like a wounded elephant and it was so putrid I was grossing myself out :facepalm:

    Add the chopped up ham and let cook for another 30 mins, stirring frequently to make sure them peas split to their maximum potential. That's more like it. Add some more S&P to taste if you like.

    It's the split peas. You really have to soak those bastards overnight then cook the hell out of them. They expand in the gut if not cooked properly.

    I checked out like 5 different recipes...some said soak them overnight, some said an hour, some said nothing about it at all....cook 45mins/cook 2 hours etc. etc. I went down the middle and soaked them for 2 hours and then cooked for 1 1/2...came out great. :dontknow:
