    The best bananas for banana bread are incredibly over-ripe ones. When mine start to get black spots on them and the kids won't eat them anymore.............I freeze them. They are entirely black by the time I pull them out of the freezer (never refrigerate your bananas, let alone freeze them) but they always add the best banana flavor.

    If you're going to go with ones that ripe, add banana liquer, or banana extract to bump up the banana flavor. :hat:

    You could probably use them now, but it is better when they are more brown and smooshy, but you should be fine.
