10 minutes hard boiled is good enough. I don't need no 30 minute egg.

It's not the method it's the age of the egg. If they are super fresh eggs they stick to the shells. Let em age a few weeks and they peel no problem.

I don't think you understand DBD's quest for the perfect hard boiled egg.

    It's quite intense.

Phelios sent me the most informative article on cooking eggs. I am still in the market for an immersion circulator.

i dunno: they also claim the best way to cook bacon is in the oven, but i get it made that way every morning at the office cafeteria and i would rather have microwaved bacon than oven cooked.

I boil 15 min and then about an hour in the fridge before I peel them...perfect every time.

after you boil them you are supposed to drain the hot water, and throw a tray of ice cubes in to the pot and then swirl the eggs and ice around in the pot to stop the cooking and to fracture the shells. they don't stick that way.

yep, it has to do with the PH level in the egg. let them sit for a few weeks in the fridge and they will peel easy peasy.

Run cold water into the pot to cool them down quickly.
