Not turkey - there, it's related to Howard Stern as I would keep out turkey, the same way I'd keep Benjy out of a party I'd hold.

What do you put into the best chili?

First thing I do is put a tough cut of beef to boil for a couple hours in spiced water. When it's almost ready, I cut a white, red onion, and garlic and fry it in a pot with a little oil. Then I add some ground beef and let cook, I add fresh cumin, garlic salt, pepper, celery salt, and a few other things. I then add some Carol Shelby chili mix and add a little more cayenne. I drop in a can of cooked peeled whole tomato's and a couple cans of pinto beans.

Then I start pulling (shredding) the beef and I drop it in along with a little pour of either whiskey or cognac, what ever I have next to the stove. (And no, I don't drink, I only use it for cooking)

Then I test the flavor and start adjusting, when good, I open 2 cans of sweet S&W Red Kidney beans and mix in.

I then call the family and serve.

I also like to have a couple hot dogs on top.

Oh man, niiiiiiice. Some Sunday AFC/NFC champ games chili. Very nice.

I have no advice other than to play around with your spices and flavor it how you like it. I like a spicier chili. Another thing I like to do is, for more special chilis, is get a decent cut of steak, like a t-bone, and cube it, brown it with garlic and onion, and dump that in the chili to simmer for a few hours.

I'm jealous of ya, ya bastich. I'm dieting so no fun for me.

    Here's what matters to me:

    Taste
    Texture
    Consistency

I always spice it up so you get a front-of-the-tongue taste and a back tongue taste. I use some crunchy veggies for texture. I cut up jalapenos, green peppers, (lots of) tomatoes and onions and lightly saute them before adding them to the beef. I use McCormicks' spice packs plus a little bit of red pepper, some jarred garlic and ample Louisiana hot sauce.

And I use a jar of spaghetti sauce because it's sweet. I love the mix of sweet and hot (just like I love my ladies, too).

I took your advice and skipped the kidney beans. They're just filler, IMO. The end result is lots of veggies, a hot (not too hot) taste, and a tiny bit of garlic, sugary, and hot sauce flavor.

Delicious. I have shredded cheddar and low fat sour cream at the ready.

    Now to bake the cornbread...
