    and a rough idea of what the person who made it called it. she said it was called something like "hearty roulay," (roulet?) but a web search doesn't come up with any such recipe. anyone heard of anything close to this?

    it's made in a crock pot and has a really thick, pasty consistency. these are some of the ingredients i could taste in it or figure out:

    chicken thighs;
    pork/country sausage;
    great northern beans;
    sage;
    garlic.

    the name sounds like "roulay" according to what this chick called it. it was so delish and i want to make it and this lady is out of town running the chicago marathon this weekend. help a brother out.

    That's sort of like the recipe but I think it would taste good with some sausage thrown in.

    That looks like an Americanized recipe. Authentic French cassoulet has duck confit, sausage, ham hocks, and pork shoulder in it. Takes days to make if you do it authentically.

    I read a lot. :coffee:

    Actually, I've researched that recipe because I'd really like to try and make it one day. :D

    that seems so close, but i don't think that's exactly it. i might modify that recipe a bit and use country sausage instead of bacon and boneless chicken thighs (cut up) instead of bone-in thighs. i want to cook it in the crock pot, too, so i'll probably skip the bread crumbs and baking step. though i could make it in the crock pot and then when it's done, put it in small chili crocks, top with bread crumbs, and brown under the broiler.

    yeah authentic cassoulet is a complicated recipe/process. i wonder if this "roulet/roulay" recipe was meant to be an easy crock-pot derivative of cassoulet.

    it was so delish and i can't find the recipe. argh.

    If you get bone in thighs, it will actually help the sauce become thicker, especially since you're cooking it low and slow in the crock pot.

    this is true and you raise a good point. counter point: i want it to be chili-like. counter point to my counter point: bone-in cooked in the crock pot will result in meat falling off the bone.

    this is true and you raise a good point.
