I need some Christmas Cookie recipies.

    I'm not making those sugar decorated things. Just basic cookie recipies (chocolate chip, oatmeal, sugar) but maybe with a twist. Something a little different.

    Please post your favorite cookie recipies. I'm not a baker so please nothing too complicated.

    1 cup salted butter
    1 cup caster sugar
    2 tsp. pure vanilla extract
    2 cups all-purpose flour
    1 tsp. salt
    Raspberry jam

    Preheat oven to 325° F.

    In a large bowl cream butter and sugar using an electric mixer. Add vanilla, scraping down bowl as needed. Blend in flour and salt, mixing until thoroughly combined.

    Roll tablespoonfuls of dough into small balls about 1 inch in diameter. Place dough balls on lightly greased cookie sheets about 1 inch apart. Press down the center of each ball with a spoon, forming a depression. Fill each with a teaspoonful of jam.

    Roll small amounts of dough into thin strands to make fingers and attach 3 - 5 to each side of the depression.

    Bake 15-20 minutes or until golden brown. Transfer cookies immediately to a cool, flat surface.

    Find bakery section. It's usually near the bread.

    Locate cookies.

    identify christmas-y designs on said cookies. (bells, holly, trees, etc. Lots of greens and reds are preferred.)

    Purchase.

    My mom used to make cookies very similar to that, but with finely chopped pecans added, and I think we called them "Bird Nest" cookies (?).....Good stuff whatever ya call them... My mom was old skool; she spent most of December making cookies and candy and stuff......I just buy shit at the grocery store.....:(

    1 tbsp. cooking oil
    3-4 doz. small pretzels
    1/4 c. chopped peanuts


    Melt butterscotch pieces and oil over hot, but not boiling water. Stir until smooth. Remove from heat but keep over water. With tongs, dip each pretzel into butterscotch. Place coated pretzels on wire racks (with foil underneath to catch drippings, if desired). Sprinkle tops of pretzels with chopped nuts. Refrigerate a few minutes until coating is firm. Makes 3-4 dozen.

    These are pretty baller too. Make icing with powdered sugar, water, and raspbery extract though..much better than the frosting they suggest..

    Lemon Cake Cookies

    1 box Betty Crocker® SuperMoist® lemon cake mix 1/3 cup butter or margarine, softened 1/4 cup shortening 1 egg 1 container Betty Crocker® Whipped or Rich & Creamy lemon frosting


    • 1 Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, butter, shortening and egg on medium speed about 1 minute or until blended.
    • 2 Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls 2 inches apart.
    • 3 Bake 9 to 12 minutes or until light brown around edges. Cool 1 minute; remove from cookie sheet. Cool completely. Frost with frosting. Store covered.
