i need some help tweaking my bruschetta recipe please

    i put this together and even though it tastes good, it is missing something and i can't put my finger on exactly what would make it taste better.

    i start by chopping up a jar of marinated artichoke hearts...

    then i cut up one of the artisan loaves of bread i made to use for the bruschetta and i pulled the goat cheese from the fridge to soften a little as i toast the bread in the oven...

    i just put some olive oil on the bread using an atomizer and rubbed it with a garlic clove...

    put on the toppings and put back into the oven for a bit and end with a quick broil...

    it was really good, but it was like eating something that just needed a little salt to taste that much better. only in this case it isn't salt it needs and i can't figure out what i should add.

    That's the weirdest thing ive ever seen artichoke and olives..... I am definitely trying it, I'm too curious.
    And its missing tomatoes cut up some cilantro

    hmm...i'm not sure those flavors would go that well with this...maybe tomatoes, but if i used cilantro i'd probably go with non-marinated artichoke hearts.

    i was thinking of something like adding bits of roasted red pepper. :dunno:

    is the tomato to make it an official bruschetta or would tomato actually taste good on that? i'm having a hard time putting those flavors together in my mind's tastebuds.

    oh yeah, totally in keeping with the mediterranean flavors. maybe some parmesan or herbs de provence?

    i will for sure experiment and try some tomato on it next time. grape or diced up roma tomatoes, probably.

    I only read the first post, Dinkus. But I'm going to say the answer is an acid of some sort: vinegar. Vinegar is what you need here. A really good sherry vinegar would be my first choice. :wub: Second choice would be a good red wine vinegar, or balsamic.
