Went down to the local meat locker, got fresh chicken and slab of ribs for my wife and two kids. They are brined and ribs dry rubbed with paprika, seasonings and turbinado sugar. The chicken is done with olive oil, fresh lemon zest, black pepper and seasonings. The meat all prepared. Will I use my gas grill for these babies? Hell no, I use my Smokey Mountain smoker by Weber.. Ready to go. Will I use charcoal? No, I use a heating coil for the heat and my smoke comes from apple wood and maple wood chips. They will slowly cook and smoke the meat, the round tray above the coil is filled with apple cider vinegar and water to keep the meat moist I will pull the meat out in about six hours, adding wood every hour or so and the meat will fall off the bone on both.
