    First off, buy good charcoal. Kingsford is your best bang for the buck and on holiday weekends Home Depot usually puts it on sale 2, 15lb bags for $9.99. Use a chimney to start light your charcoal, you can get one for around $10=$15 and they are worth every penny.

    I have gotten a little snobby with my charcoal using natural wood and lump charcoal but I use Kingsford also. If you watch Amazon and have Prime you can get some really good stuff for a decent price

    Your rub is very important but the ingredients are easy. Buy a regular rub mix you like and dress it up. I like this chicken rub and add cane sugar, garlic powder, black pepper, onion powder,cayenne pepper and cumin.

    I bought a rack of pork loin and st, louis style ribs, rubbed them down with canola oil and then covered them in my rub

    I rub down the ribs and then start my charcoal and get the grill at the right temp. I try to keep my grill at 250 degrees, so I will close my bottom vents and keep the vent on the cover wide open. I also place all my coals to one side and put a small container of water to keep the humidity up and your meat moist.

    Once the grill is at the temp I want it, I place my ribs in the rack. You can get one of these on Amazon for under $10. Its time to throw you wood chips on now too. For pig I like apple wood and hickory which I soak in water for a couple of hours before hand

    Believe it or not Johnny Trigg uses peanut oil to get the rub to stick.

    Smoking wood tip.
    You can wrap up the wood in some aluminum foil and then poke holes in it with a fork. That way the chips keep smoldering even after they dry.

    This was at 1.5 hours and I turned the ribs around so the rack that was farthest away was closest to the coals now. This first segment of smoking is for 3 hours and dont worry about the outside browning up, its just the smoke. Keep feeding your grill new wood chips once an hour and if you get a flame up while the lid is off, just splash a little water on it, you wont hurt the coals.

    I tried this with another tin like I have the water in and I like the stronger flavor I get from putting them directly on the grill and coals. Its deg a personal preference deal.
