    I start the sauce by sauteing (in EVOO) a large sweet yellow onion, 6 cloves of garlic and a little parsley chopped up in the food processor.

    I use carrots instead of sugar to reduce the acidity...only faggots add sugar to their tomato sauce. Lots of fresh basil is a must! :grad:

    Dump all that goodness into your pot and add some sea salt and fresh cracked pepper...that's all it needs. I like to simmer my sauce for at least 3 - 4 hours.

    I have a dumb question. When you cook that do the tomatoes break down into sauce during cooking or do you have to puree them with the food processor?

    1 1/2 lbs of ground beef, milk soaked bread, 1 med onion (in the food processor), parsley ans a little s&p is all you need! I used to add ground pork and veal, but I like the way straight up ground beef tastes better, so piss of if if you don't like it! :pie:
