    tuna mix includes 1 avocado, 1/2 yellow onion, a plum tomato, and wasabi

    lemon pepper to taste

    I used chunk albacore tuna

    oh yeah forgot to say the tuna mix includes 8 oz of cream cheese

    here they are stuffed and ready for the oven at 325

    monterey jack added to top

    little ones just have cream cheese

    oven temp is just enough to melt the cheese and soften the peppers

    no eggs or celery in the tuna either

    but I have some tuna left over for sammiches so will add those

    I'm going to try this, but I might put some smoke on them

    I make these in tbe smoker with cream cheese, plus jack or cheddar, pork rub and shrimp inside, and wrapped with bacon

    I also think using sushi grade tuna would be awesome, you'd get it cooked medium rare in the pepper...

    that does sound good, I usually cook them til the bacon is nearly crisp, how do you know when they're done?

    you can use picked jalapenos instead of fresh ones as well

    can be served cold that way w/o the mont jack on top

    Not a food snob by any means and loved stuffed jalapenos. But I would probably "accidentally" drop those in the dirt. Just does not sound good. But enjoy.
