    we start with the sauce....

    San Marzano tomatoes, chopped fireroasted tomatoes, and 1 small can of tomato paste. Chopped carrots have been added.

    It looks relatively good. I'm sure you know to add salt in the very beginning, not at the end like this cockamamie recipe states. :grr:

    That is my pet peeve, when a recipe takes you all the way to the end and then says "season with salt and pepper to taste". Ick. So awful.

    We are just making the sauce now bro. This afternoon I'll batter and bake the eggplant and layer that on top of this sauce with the parm.
