Here we go...trying something a little different. I've put chopped tomatoes, cilantro, and peppers in the pan and added kidney and pinto beans. The brisket will rest on that.

The brisket is about 4 pounds. I've rubbed olive oil on it and then rubbed a bunch of spices - parsley, sage, rosemary, thyme :c, chili powder, garlic powder, tarragon, black pepper, mustard powder, bay leaves, basil. A little this and that.

Put in the oven at 225 uncovered. This will take a while. Started at 8:30am.

At 11am I flipped it over fat side up. Will let it brown for a while then I will cover with foil in a couple hours so it doesn't dry out.

couldn't we teach her how to cook it in a slow cooker? (1) put liquid & veggies in pot (2) put salted meat in pot (3) turn electricity on (4) go shopping (5) in 3 days remove from pot. Done.

well yes you do need about 5 days to do it right in a slow cooker. in the dark ages (pre-slow cookers) my grandmother would use a 12 qt pot and cook it for days, constantly adding more water as it evaporated. at the end of the week it was fantastic.

can use a pressure cooker to do most of the work, and finish it off in the oven (for a future feast) in about 4 hours total.
