It's an adaptation I came up with for the traditional oatmeal cookie. Start with the recipe for basic oatmeal cookies. NO RAISINS. Not only is there nothing worse than a delicious confection being RUINED by the addition of horrid little raisins, they just wouldn't fit with the adaptation. I opted to replace the raisins with some mini chocolate chips... 1C butter, softened 1C sugar* 1C packed brown sugar* 2 eggs 1t vanilla ext. 2C flour 1t bkg. soda 1t salt* 1t cinnamon 3C dry oatmeal (quick oats) additions: mini chocolate chips raspberry preserves *I don't like things too sweet, plus I figured the preserves would add significant sweetness, so I used less sugar and brown sugar than the recipe called for. I also added a teeny bit more salt.
