Tarpon, when you make prime rib, what internal temperature do you shoot for? (125??)
I was talking about that old turd, MrWarmth.
I usually pull it around 117-118 and tent it, knowing it will reach around 126-127 after resting for 25-30 minutes. When people want it cooked more, we have a pot of Au Jus they can dipped the meat into for a couple of minutes.
