let steaks come to room temperature before cooking? bullshit

    you want a crust on the ootside an the inside to be medium rare, so why do you want the meat the same temp (e.g., room temp) so that it cooks evenly? you don't.

    salt an pepper your steak (some people add cornstarch to the ootside with the salt an pepper) an the put in the freezer for 15 to 30 minutes before you cook it.

    My grill has a searing chamber. It's the reason I bought it yet I rarely bother to use it. What is your opinion on searing?

    it's good shit bro. you probably don't need to do this method if you have a searing chamber. i want one on the grill i'm getting but the weber genesis, which is already $700, doesn't have one. the weber that does is super expensivo.

    Thanks man. I'm going to use it on one steak and not the other next time I grill. I'll do a side by side blind taste test and report back with the results.

    I thought that warm meat was a breeding ground for bacteria and stuff that can make you ill even after you cook it?

    I'm no grillmaster, but my understanding is that searing is mostly to seal in the juices. The freezer trick might help accomplish the same thing?
