I love soup. I make a mean minestrone, Italian wedding, creamy tomato basil. Vegetable, turkey noodle, bream of broccoli, and French onion.

Potato Leek Soup: Sauté chopped celery and leeks in butter (and salt. Of course.)Add diced peeled russett potatoes. Add enough vegetable broth to cover. Cook till potatoes are done. Add milk or half and half. Heat through. Wahla.

Tomato Soup: Sauté onion and garlic in butter(salt of course). Add canned San Marzano tomatoes (unless its the peak of summer and fresh tomatoes are great). Add white wine. Cook for 10 or 15 minutes. Add fresh basil. Add enough cream till its as creamy as you want. Blend with a stick blender.

MN Wild Rice, easily my best selling soup-
sauté onions, carrot and celery in butter, when softened add flour to make a roux.
Whisk in chicken stock, dry sherry and thyme.
Add cooked chicken, cooked wild rice and heavy cream.
You can also add diced ham and slivered almonds if you like.
