Making Mile J High Green Chili today....

    Step 1....fresh veggies....

    Step 2....cut up said veggies, drizzle with a bit of olive oil, a bit of salt & pepper....

    Step 3....roast veggies....

    Step 4....prepare base of chili....
    [​IMG]


    Step 5....base is ready....

    Step 6....quickly brown pork....
    [​IMG]


    Step 7....chop up roasted veggies....

    Step 8....mix everything up & now we wait....

    I know....I always think i'm gonna over cook the meat during the browning part & I freak out & pull it....

    If you just threw the cut veggies into the pot without roasting them, wouldn't they cook in the base liquid? What's the advantage to roasting them first?
