if i didn't have to buy a metric ton of curds to do a batch i would. making them yourself appears to be somewhat easy and not really time consuming. it's just an extra step and with the leftover whey, i can make ricotta. i'll see how it works out and report back. if i fuck it up, i'm out a gallon of milk and about an hour.
