My thanksgiving contribution: Caramel apples (with shenanigans)

    As typical everyone brings a dish to the family Thanksgiving dinner.
    I made caramel apples. It was easy and fun! I got creative with the toppings... peanuts, mini peanut butter and chocolate chips, and some I drizzled with Smuckers "magic shell" vanilla ice cream topping.
    I was gonna buy coconut too but I didn't want to spend any more money.

    My dad. But I chucked a couple others into the mix. Not sure who all got em. People took them home. It will be a delightful surprise.

    So anyway, the apples:

    1 14-oz package caramels
    2 T milk
    4-6 apples (yield will depend on apple size)
    Candy/Caramel apple sticks (available at most grocery stores; if not you can find them at AC Moore or Michaels)
    Toppings (get creative)

    Unwrap all the caramels and lay out all your toppings in shallow dishes.
    Wash apples, remove stems and stab with the sticks.
    Put caramels in a bowl and microwave for one minute. Add milk and stir. Microwave an additional 1-1.5 minutes.
    Stir the caramel and begin dipping apples...

    One at a time, dip and apple quickly. Use a spoon to spread the caramel. Immediately roll in desired toppings and place on buttered serving tray.

    My advice:
    Have a stick of butter handy and butter EVERYTHING. The caramel hardens/gets very sticky very fast and will be a nuisance. Butter (and re-butter) the spoons you use to spread the caramel. Butter the spoon rest or it will stick. (I just used the empty caramel bag as a spoon rest to limit washing because that's a pain too, and I buttered it)

    Also you'll have to re-heat the caramel every couple apples. It cools quickly and the cooler it gets the less smooth it is/the harder it is to work with.

    The onions:

    Selecting suitable onions is the most challenging part. Check out the apple selection first and try to find onions that are the most similar in size and shape.

    I used yellow onions with the paper still on. I selected the ones with the smallest/flattest root clusters.

    Peeled white onions were too football-shaped. They wouldn't sit flat like apples. Same with red onions. Still other onions are too portly.

    I took the first layer of paper off the onion, but not too much because I wanted it to sit as flat as possible. But it doesn't have to be 100% perfect because the excess caramel on the bottom gives it some footing.
    I gently cut off the point at the top of the onion, far enough to make it reasonably flat but not so far that I cut into the onion... I didn't want the juice/smell to seep out and give away the surprise.
