So, do they taste like huge cottage cheese curds or are they more cheese-like?

Clearly the gravy wasn't hot enough. Those curds are supposed to be molten mounds of melted cheese.
I make Poutine and I make the cheddar cheese curds from scratch. It's delicious.

Nice pic though (srs). I like all the ingredients of poutine, but not together... I like real cheese curds because they are "squeaky" when you chew them....

How do you make cheese curds? I thought they were a byproduct of the cheese making process.... but I would like to make them if it's easy.
