    Tonight is steak and potatoes, all's good, I got this under control.


    Tomorrow night, I'm doing another Tri-Tip. I picked up some Dry Rub for it, and I haven't used Dry Rubs before.

    Do I use the whole small can of it? Should I be applying it now?

    I wouldn't use a dry rub on a tri tip. I marinate it with seasonings and water. If you don't use a liquid, your tri tip will be dry and stringy.

    Dave, I don't know which brand of rub you're using, but I'd hold off using it until 3 or 4 hours before you grill. Most rubs contain salt, which will pull moisture from the meat. Unless you like the spices more than the meat, a thin coating (a heavy sprinkle smoothed out with your hand) is all you'll need for the rub. Check the instructions just in case I'm wrong, as I usually make my own rubs from scratch, and this is how I do it, with great success.

    What cut of meat is good for Dry Rub's?

    dry rub just adds flavor, it wont tenderize. You a wet rub with acidity to tenderrize tough cuts, soy sauce, citrus, worchesterererer sauce

    I made a 3 lb tri tip last night with a simple rub of salt, pepper, garlic powder and paprika. Cooked it at 350 for an hour, internal temp was 140. Let it sit for 10 minutes and then cut against the grain on an angle. It was med rare, tender and juicy as hell.
