    If I go to a pizza joint and see a conveyor oven, I'm instantly prejudiced against it.

    I think you need to have the smoking hot oven with a stone bottom, right?

    I'm sure science an physics backs up my theory. :grad:

    For "real pizza" people, they need a cooked crust/bottom.

    Its just that if you have a high volume pizza place, double deck ovens cant really keep up, no matter how many you have and how good you are.

    There is this one oven called the Rotoflex. Ive never used it but it has rotating stone decks so the pizza cooks properly and its fast as shit.

    It's all about the crust to me..........If the bottom is crispy....Not crunchy........And the edges are the texture of Italian bread.......I'm in heaven.............
    And that can only be done on stone........But I did have a pizza pan that had hundreds of tiny holes in the bottom that worked great................

    To answer the original question, hell no.
    Pizza needs quick high focused heat to make the crust rise, get crispy and cook tbe cheese.
