Roast Beef Question

    I am having a reception for the christening of my twins Sunday. Mrs. O Face wants roast beef. The thing I am trying to figure out is the best way to cook it. We have to leave for church around 10:15 and won't be home until about 12:30. I clearly don't want to roast it when we get home because it won't be ready for a an hour or more. So the choices are (1) try slow roasting it -- sear the thing and then roast it at 225 for like 2- 2 1/2 hours; or (2) roast it at a higher temperature for an hour or so before we leave for church and then just have it cold. The gravy will be warm. What do y'all think?

    It's not 2 hours. the service is at 10:30 and is usually about 1 1/2 hours (episcopal). The baptism is during the regular service. then they are having cake at the church after the service during coffee hour.

    I've been to catholic baptisms and the service is roughly the same amount of time, maybe a little longer because they do the baptism after the service but you have to go to mass too.

    That's a tough one. Depends on which cut of roast you are cooking. This may be an @Engaged Chicken question.

    My step sister is having her fifth kid this year, second in wedlock. Just thought I would throw that out there. I would follow what EC says. Her recipes haven't failed me.

    Cook for 7 minutes per pound in a 500 degree oven. Turn off oven. Do notopen oven door.!!!!! Leave in there for an hour and a half
    It will be perfect. Serve with hot gravy. You're welcome.

    Ok well if it is a 5 lb roast, you are talking about total cook time of 2 hours. Do I do that before we leave for church?

    What cut should I use? I was going to go rump. should I do eye round or splurge for sirloin?

    Ohhhhhh jesus. Listen. No rump. For christs sake not eye round. You have to do prime rib. No way around that.

    Preheat oven to 500 degrees. Put the damn meat in there for 35 minutes (or whatever the number is - 7 minute per lb). Shut off the oven right before you walk out the door. When you get home it will be done.

    The oven slowly cools, so even if you;re gone for more than an hour and a half (or however long), the meat wont over cook. the oven will only be barely warm at that point.

    make sure your oven is true to temperature.

    I'll have to say that I did that one time and it was not good. Tough as hell. I just did it once though.
