So I grilled a tri-tip and made fajitas

    Internal temp to 115, then reverse sear for 5 minutes each side. Total time aboot 50 minutes.

    Then rest for 20 minutes.

    Nice. Why do you reverse sear it? I always sear mine first, then I pull it at 120 and don't have to worry about the seer raising the temp too much.

    Exactly how I do, sear at 120, pull at 135, tent and rest for 20 mins, hopefully finish around 138

    Smoking them is okay but the real flavor comes from the crust from searing, and you can get plenty of smoke on it on a charcoal grill

    I watched a youtube and this fat redneck did the reverse sear. So I tried it. :c

    It came out pretty juicy so I don't know if it matters either way.

    The reverse sear finishes the temp at 125-130.

    Searing at the beginning promotes the outer layer really drying out over the length of the cook
