Picked up some customers from a high end hunting party where they apparently let loose 600 pheasants and massacre most of them. The hunt club cooks clean them all and place them in baggies. My customer asked if I wanted a couple I said yes and ended getting a shitload. I'm cooking most of them now. I just seasoned them up with montreal chicken seasoning garlic powder black pepper and lemon salt. Then I smothered them in onions and mushrooms. Smells good as hell. This will be my first time having pheasant. I hope it turns out good.
