Picked up some customers from a high end hunting party where they apparently let loose 600 pheasants and massacre most of them. The hunt club cooks clean them all and place them in baggies. My customer asked if I wanted a couple I said yes and ended getting a shitload. I'm cooking most of them now. I just seasoned them up with montreal chicken seasoning garlic powder black pepper and lemon salt. Then I smothered them in onions and mushrooms. Smells good as hell. This will be my first time having pheasant. I hope it turns out good.

Turned out decent a little tougher than I thought but I'm sure thats just because I over cooked them a bit to be on the safe side. Still tasty.

Look how filthy the pot of onions is.. Aint no way all that caked-on debris came from just this one meal
