I cooked it on the RecTec at 225 for about 4 hours. Internal temp 135. That gives you a medium cook.
Everyone has been eating it and it will be gone tomorrow.
oh yeah and reverse sear at 500 broiler setting in the oven for about 5 minutes each side.

I bought some Ciabatta bread rolls today and put them in the pan with butter, got them toasty, then added swiss cheese and horseradish sauce we made, and the meat.

I really like this stuff on my roasts/beef:
some like it medium rare, in that case you take it out at 130.
unfortunately, the person I'm under contract with likes her shit well done.
