Technically in Ca and Tx we guzzle beef ribs.
I like a good vinegar slaw. None of that KFC milky stuff.
I've never had authentic nc slaw.
I smoked a pork shoulder for the first time last summer. Made it with the Carolina style vinegar mop, and used the same sauce for the slaw to go with it.
My wife makes a killer Wasabi Coleslaw...
and pork chops.
Well it's 75 degrees. Brrr.
