I rarely have people over. I'm also not a big football guy. However, my pals are beer snobs and they will get high off of like two and leave the rest for the amazing host

[IMG]You can't get much easier than this.
    • 1 whole Beef Chuck Roast, 2.5 To 4 Pounds
    • 1 can Beef Consomme Or Beef Broth
    • 3 Tablespoons (heaping) Italian Seasoning
    • 1 teaspoon Salt
    • 1/4 cup Water
    • 1/2 jar (16 Oz) Pepperoncini Peppers, With Juice
    • Buttered and toasted Italian Bread Sliced or Toasted Deli Rolls
    Directions:

Combine all ingredients in your crock pot. Stir lightly to combine seasoning with the liquid. Put the lid on the crock pot, turn on low and cook for 5 or 6 hours until meat is fork-tender and falling apart. If meat is not yet tender, cook for 30 minute intervals till it’s tender. Remove beef from the crock pot. With two forks, completely shred all meat, leaving no large chunks behind. Serve immediately, or keep warm in the crock pot.
May make the day before, then store in the refrigerator. Remove the hardened fat from the top before reheating.
Serve on buttered, toasted rolls. Top with cheese and melt under the broiler if desired. Serve with juices from the pot.

    One round sourdough bread, hollowed
One small tub of ranch vegetable dip
One box frozen spinach, thawed and squeezed

Mix dip and spinach. Serve with the bread top and chunks.

    • Horseradish Meatballs
      • 2 eggs
      • 1 tablespoon prepared horseradish
      • 1/2 cup dry bread crumbs
      • 1/4 cup chopped green onions
      • 1/2 teaspoon salt
      • 1/4 teaspoon pepper
      • 1-1/2 pounds lean ground beef (90% lean)
      • 1/2 pound ground pork or turkey
      • SAUCE:
      • 1/2 cup water
      • 1/2 cup ketchup
      • 1/2 cup chili sauce
      • 1 small onion, finely chopped
      • 1/4 cup packed brown sugar
      • 1/4 cup cider vinegar
      • 1 tablespoon prepared horseradish
      • 1 tablespoon Worcestershire sauce
      • 1 garlic clove, minced
      • 1 teaspoon ground mustard
      • 1/4 teaspoon hot pepper sauce
        1. In a large bowl, combine the first six ingredients. Crumble meat over mixture and mix well. Shape into 1-1/2-in. balls.
        2. Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 35-40 minutes or until a thermometer reads 160°; drain.
        3. Meanwhile, in a large saucepan, combine the sauce ingredients. Bring to a boil, stirring often. Reduce heat; simmer, uncovered, for 10 minutes. Add meatballs; stir gently to coat. Yield: 3 dozen.

    Dill Pickle Dip

1 8 ounce package cream cheese, softened
1 1/2 cups chopped dill pickles, I use 10-12 baby dills
1/4 cup finely diced sweet yellow onion
1/4 cup pickle juice, use less for a thicker dip
    1 teaspoon dried dill weed
1/4 teaspoon granulated garlic or garlic powder
    1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper, adjust to taste

Place the softened cream cheese, pickles, and onion in a mixing bowl. Press the pickles into the cheese with a wooden spoon until the cream cheese is soft enough to stir. Add all remaining ingredients and stir until evenly distributed. Cover with a lid and chill for at least an hour before serving. The dip will keep nicely in the refrigerator for at least a week.
