Czech out this awesomeness.
I went with paprika, sugar and oregano and I threw in some crushed red peppers. HOMYG
1/4 cup plus 1 tablespoon extra-virgin olive oil, plus more for drizzling
2 large onions, thinly sliced
1 teaspoon sweet paprika
1/2 teaspoon sugar
2 large bell peppers (1 red and 1 green), cut into thin strips
1/4 cup water
1 1/2 teaspoons dried oregano, crumbled
Kosher salt and freshly ground pepper
4 sweet or hot Italian sausages
no salt no pepper
Make it quick. I have to leave in 2 minutes.

I cooked the fuck out of the onions paprika sugar and oregano and added back the cut up sausage.
Meanwhile I roasted the peppers.
Let them cool, sort of, and peeled them.
