Here is my rub recipe I got off of Amazingribs.com

    Ingredients
3/4 cup firmly packed dark brown sugar
    3/4 cup white sugar
    1/2 cup paprika
    1/4 cup garlic powder
    2 tablespoons ground black pepper
    2 tablespoons ground ginger powder
    2 tablespoons onion powder
    2 teaspoons rosemary powder
    2 tablespoons sea salt

I couldnt find rosemary powder so I just put some dried rosemary in my coffee grinder and I had rosemary powder pronto :grad:

I use a chimney to start my coals, they really are the easiest and best way to get charcoal lighted no matter what you're doing

I'm using bourbon barrel oak & apple wood, its a nice balance of woody/sweet. Someone was telling me that I have to try Pecan wood which sounds really good. A lot of people like hickory but its too strong and takes away from the flavor of the meat to me

I saw a something my wife was watching on the home and garden channel about people from NY/NJ renting little patches of green in the city for like $100 an hour so they could have a BBQ and have friends "over".

That shit blew my mind... I guess I never even thought of it.

chimneys are great to start the coals, but nothing beats the explosion of flames that an open pile of brickets soaked with fluid makes, to signal the start of the summer BBQs.

we reserve small sections of Riverside Park for that too. The river and view of the NJ Palisades makes it worthwhile.

pork is healthy. it just takes a few more days to digest (vs beef, chicken, or fish which takes a day or less).

    I'll play along. :D

Put a dry rub this last night and let it percolate in the fridge.

Think we might go against the grain and eat out tonight. We are apartment/dog sitting in this area of Denver that we don't go to much, and it has a bunch of nice restaurants.
