    how many people? you going cheap? how about a standing rib roast/prime rib instead?

    i don't usually marinade steaks so i'm no help there.

    10-12 but not expecting the steak to be their meal. Just something to pick at or make a sandwich with while hanging by the pool and watching football.

    I plan to throw it on the grill.

    I will probably get a London Broil unless advised otherwise.

    skirt steak on the grill is cheap and fast and easy. it'd work well with a marinade, too. not a bad one to make for the type of situation you have. get a few.

    i'd make a chimichurri sauce and skip the marinade. just season with salt and pepper and then serve with this:

      • 1/2 cup coarsely chopped fresh flat-leaf parsley
      • 1/3 cup extra-virgin olive oil
      • 1/4 cup fresh lemon juice
      • 2 tablespoons minced shallots (about 2 medium)
      • 1 teaspoon minced garlic
      • 1 teaspoon dried hot red-pepper flakes
      • 1/4 teaspoon salt

    Preparation
      1. Stir together all ingredients in a bowl.

    Tri Tip is very good sliced and super easy to cook. No marinade necessary, just season it well a few hours before you cook it. I have a rub if you need one.
