Zuppa Toscana

    For dinner tonight I made Real some Zuppa Toscana Soup (think Olive Garden) and chicken parm. I took pics of the soup making process for everyone's enjoyment! :cheer:


    Start by browning one pound of Italian sausage. Add 1 1/2 tsp red pepper flakes.

    When browned, remove from pan. Put in a bowl and place in refrigerator.

    In same pan used to brown sausage, add one large onion (diced), few cloves of garlic (diced) and 4 strips of bacon cut into small pieces. I think in the future I would actually just use pre-cooked bacon. Cook on med-low until onions turn clear, about 10-15 mins.

    While onions/bacon/garlic is cooking, thinly slice 3 large potatoes.

    When onions are cooked, add 10 cups chicken broth. Bring to a boil. The recipe actually suggested water and chicken bouillon, but I ended up using half chicken stock and half low sodium chicken broth.

    Once broth is boiling, add sliced potatoes. Cook until potatoes are tender.

    Once potatoes are done, add one cup or heavy cream.

    Chop 1/4 of a bunch of kale into small pieces. If you don't have kale, spinach would work too.

    Add kale and previosly cooked sausage. Heat through.

    Soooo yummy! Tastes just like the restaurants.

    I also made chicken parmesan. The picture didn't turn out too pretty, but it was still tasty.

    Yes, subway also makes an authentic meatball sub and Italian BMT. Olive Garden is saved for only the most special of occasions. Those are our choices in small little Iowa, land of no restaurants.

    I actually preferred the soup tonight. I make chicken parm all the time (it's Real's fav) so it was nice to switch things up with the soup.
