To each his own, that's what I always say, whatever floats your boat, comme si, comme ca.
I went to Steven Raichlen's website for tips on how to cook it and what's usually served with it, and also researched what "authentic" Santa Maria tri tip is served with. I'm making the salsa, pinquito beans, and garlic bread that all the websites I found recommended.

No, it's different. I can get flank steak in any grocery store around here, but I've never seen flatiron steak offered anywhere around here til I went into this shop.
